4 (6-ounce) skinless, boneless chicken breast halves
1/4 teaspoon salt
1/4 teaspoon pepper
1 tablespoon olive oil
How to Make It
Preheat oven to 350°. Combine hummus, feta cheese, diced tomato, and chopped kalamata olives. Cut a 1-inch-wide slit into the thick end of chicken breast halves, and carefully cut down to center of chicken to form a pocket. Divide cheese mixture evenly among pockets. Secure with wooden picks. Sprinkle chicken with salt and pepper. Heat a large ovenproof skillet over medium-high heat. Add olive oil to pan. Add chicken to pan; sauté for 4 minutes. Turn chicken over. Bake at 350° for 12 minutes; let stand for 5 minutes.

Very fast & easy, and delicious to boot!!! I used roasted garlic hummus from Trader Joe's & basil, oregano & lemon feta (Athenos), otherwise I didnt deviate from the recipe.The pocket in the chicken is tedious sometimes, but be patient the skill does happen! I used my stainless steel skillet to cook & bake the chicken. The result was tender, moist chicken & a yummy filling that my husband couldnt get enough of!! I served this with Far East Roasted Pine Nut Couscous & followed a recipe on their back label which added asparagus, tomato & parmesan cheese & cooked the couscous in chicken broth. Added a glass of Barefoot Pinot Grigio & had a lovely!!! dinner. I would make this for company in a heartbeat, so easy......
I almost never make a dish that hasn't already been reviewed, but this one just seemed too good to wait. Boy am I glad I went with my gut. This was wonderful and so easy. The flavors were bold and bright. This will definitely join the rotation for me.
