This all-purpose marinade is great on just about anything—from chicken to beef; though, we especially love it for marinating a mix of summer vegetables. We call this “The Master Marinade” because it represents the blueprint for a perfectly balanced marinade. While the recipe below is an excellent multipurpose go-to, it’s also easily customizable to create different flavor profiles.
1/4 cup extra-virgin olive oil
1/4 cup canola oil
3 tablespoons red wine vinegar
2 tablespoons Worcestershire sauce
2 tablespoons granulated sugar
1 tablespoon chopped fresh thyme
1 tablespoon black peppercorns
5 to 7 dried chiles de àrbol
4 to 5 bay leaves
3 garlic cloves, grated with a Microplane grater
How to Make It
Combine all ingredients in a large bowl, stirring with a whisk. Use as desired to marinate vegetables, poultry, or meat.
