The essence of bay adds interest to plain mashed potatoes.
2 pounds baking potatoes, peeled and cut into 3/4-inch pieces
2 cups water
2 bay leaves
1/4 cup butter or margarine
1/4 cup milk
1/2 teaspoon salt
How to Make It
Combine first 3 ingredients in a medium saucepan. Bring to a boil; cover, reduce heat, and simmer 15 to 20 minutes or until potato is tender. Remove and discard bay leaves. Drain potato, reserving 1/4 cup cooking liquid.
Combine potato, reserved liquid, butter, milk, and salt in a medium bowl. Beat at medium speed of an electric mixer until fluffy.
