This marinated cheese recipe from Southern Living soaks in delicious flavor as it chills. When assembling, make sure the cream cheese is thoroughly chilled for easier slicing.

How to Make It

Step 1

Whisk together first 6 ingredients. Set aside.

Step 2

Cut Monterey Jack cheese in half lengthwise. Cut each half crosswise into 1/4-inch-thick slices. Repeat with Cheddar cheese and cream cheese.

Step 3

Arrange cheese in 4 rows in a shallow 2-qt. baking dish, alternating Monterey Jack cheese, Cheddar cheese, and cream cheese. Pour marinade over cheese. Cover and chill at least 8 hours.

Step 4

Drain marinade; arrange cheese on a platter in rows. Top with pimiento, and serve with assorted crackers.

I absolutely LOVE this recipe. As others have said, it's very easy to make but looks and tastes SO gourmet! I always get tons of compliments when I make it - which is usually for holiday get togethers w/ family and friends. I put the cream cheese in the freezer for about 30 minutes prior to cutting - it seems a little easier. And I like to serve it with Wheat Thins - seems to be a good match to me.

This recipe is fantastic! I've been making it for at least 3 years and I'm still getting requests for it. It's so easy to prepare the day or night before a gathering. I don't use the pimento (because I don't like it) and it still tastes great. It's one of my "go to" appetizer recipes.
