Cream the sugar and margarine at medium speed of a mixer until light and fluffy (about 3 minutes). Add extracts, egg, and egg white; beat well. Combine flour, baking soda, cinnamon, allspice, and cloves; stir well. Gradually add to creamed mixture, beating well.
Drop the dough by level tablespoons onto baking sheets coated with cooking spray. Bake at 325° for 10 minutes; let cool on pans 1 minute. Remove from pans; let cool completely on wire racks.
I've been baking these cookies for years (at least 7yrs), every Thanksgiving & Christmas and I don't know why anyone would only give it one star?
They are similiar in texture to a hermit cookie: more cakey than chewy. Do NOT overbake and measure carefully. They do not keep very long, but they don't last long enough in my house anyway!
