These attractive rings complement ham, rotisserie chicken, and even sautéed tofu.

How to Make It

Step 1

Cut squash crosswise into 4 (1-inch-thick) slices; remove seeds. Place squash slices on a microwave-safe plate. Cover with plastic wrap; vent. Microwave at HIGH 6 minutes or until tender.

Step 2

Preheat broiler.

Step 3

Place squash on a baking sheet. Combine syrup and remaining ingredients. Brush syrup mixture over squash. Broil 3 minutes or until bubbly. Drizzle with remaining syrup mixture.

I don't usually use my microwave for cooking, but this was easy and very tasty.

Very yummy but this dish was missing crunch on top. I'd sprinkle with a little turbinado or brown sugar, or perhaps some very finely ground walnuts or pecans. The bourbon sauce is beautiful, not just over the squash but also everything else it runs into on your plate. Seems tailor made to serve around the holidays with eggnog.
