Great recipe with a slight substitution I came up with. I substituted the rice vinegar with Trader Joe's Orange Muscat Champagne Vinegar .25 cups and used coconut sugar 1.5 Tbsp instead of the brown sugar. Fresh squeezed orange and lime juices are a must. I made this with a nice, freshly ripened mango, whizzed it up in the Vitamix and viola! This went great on a spinnach salad tossed with freshly sliced strawberries, avocado and fresh ground pepper. Yum!
This is a super simple but very tasty recipe. I used thawed mango pieces and omitted the extra sugar, since there's natural sugar in the mango and the orange juice. I did miss the extra sweetness but it was still wonderful. This one is a keeper!!
Outstanding! Use a very ripe mango if possible. Mine lasted for 2 weeks in the refrigerator.
