Good, interesting, different dessert. I made with 0% greek yogurt - I better its better and creamier with the called-for 2% - was a little too tangy with fat-free.
It was delightful and different. It took about twenty minutes including toasting the coconut and crushing the ginger snaps. My guest enjoyed the refreshing taste.
We did not like the mango and gingersnaps together, plus the yogurt should have had a little confectionary sugar in it. We had to throw it away. I think peaches would have been a much better choice and as I stated, powdered sugar in the yogurt and mascarpone cheese.
