  • Stir together first 5 ingredients in a large bowl.

  • Whisk together eggs, oil, and vanilla; gradually add egg mixture to flour mixture, stirring just until moistened. Stir in mango and remaining ingredients. Pour mango mixture evenly into 2 lightly greased 8- x 4-inch loaf pans.

  • Bake at 350° for 50 minutes or until a wooden pick inserted in center comes out clean. Cool completely.
