Cream butter; gradually add sugar, beating until light and fluffy. Add egg yolks, one at a time, mixing well after each addition. Add flour, salt, and vanilla, mixing well.
Shape dough into 1-inch balls; press dough into greased 1 3/4-inch muffin pans to form shells. Spoon 1/2 teaspoon jam into each shell. Spoon filling over jam to fill pastry shells.
Bake at 350° for 20 minutes or until set. Remove from pans while warm. Cool. Top each with a dollop of whipped cream, if desired.
