Mad Risotto, Lobster Edition
We often hear that risotto is a dish to be constantly stirred. I guess that's okay if you have the time and want to be intimate with your rice, but it's not necessary. What you're looking to do is cook the rice until the starches are ready to be manipulated by human, spoon, and liquid. That can happen toward the end of the cooking process, giving you time to make a lovely little lobster ragout.
