This is really good in a pinch. I added a little Italian salad dressing to it in place of the plain vegetable oil and I omitted the butter. I also added some broccoli crowns near the end of cooking and got in my greens!
I thought this was a great brunch dish. I served it with scrambled eggs and my family loved it. I thought it was easy to make and I will be making it again.
I used smoked deli ham and a low-fat Mexican cheese blend, and thought the flavors were wonderful. Be sure that the onion is entirely cooked, and don't forget the salt and pepper. Also, a nonstick pan is mandatory. Will definitely make this again.
Not very flavorful. I would probably not make it again. Needs something to make it POP...pretty blah.
I love this recipe. It's fast and easy. A delicious dinner when you feel the need for some healthy comfort food.
