1/2 pound reduced-fat smoked sausage, cut into 2-inch pieces
1 pound unpeeled large fresh shrimp
1/2 teaspoon salt
1/2 teaspoon freshly ground pepper
1/4 cup chopped fresh parsley
How to Make It
Combine first 4 ingredients in a large Dutch oven; bring to a boil. Cook, uncovered, 16 minutes. Add corn and sausage; cook 5 minutes. Add shrimp; cook 3 minutes. Using a slotted spoon, remove vegetables, sausage, and shrimp to a serving platter; discard cooking liquid. Sprinkle vegetables, sausage, and shrimp with salt, pepper, and parsley; toss well.
It takes almost as long to boil the water for this easy entrée as it does to cook it. So, put the water on to boil first thing while you're gathering the ingredients.
