Since rice is a favorite with my family, this recipe is an easy addition to any meal. It goes together quickly, and the flavors add a great taste to plain rice. CL Reader.

How to Make It

Coat a large nonstick skillet with cooking spray; place over medium-high heat until hot. Add rice, onion, and bell pepper; sauté 5 minutes. Add remaining ingredients; simmer, uncovered, 5 minutes or until liquid is absorbed.

Love this recipe. Easy. Fresh veggies make it yummy. Cooks fast. I didn't mess with the recipe as much as the other reviewers. Only alteration: sautéd some garlic with the veggies.

I have yet to find a really good Spanish rice recipe. This one is just so-so. I used minute brown rice so the cooking time is much longer. I also omitted the vegetables (my kids won't eat them in rice like this) and with the canned tomatoes, added half a can of tomato sauce (in place of tomato juice) and some diced green chilis. way too tomato-y. I will try again, using only the canned tomatoes. I also added cumin, chili powder, garlic powder, black pepper and salt.

Used stock instead of potato juice. My 2 year old daughter loved it. For husband and myself, I added some additional hot paprika paste.

Not enough spice, but I'd try it again and perhaps add some cumin and chile powder as has already been suggested.

Not enough spices in the recipe for my liking. I added cumin, chili powder and southwest chipolte seasoning to give it more of a kick. With those changes, this recipe is a keeper for me.

Quick and delicious and better than boxed, using on-hand pantry items. However, I used chicken broth instead of tomato juice. Keep this one! We had with beef sliders.

I didn't enjoy this recipe. It needed some more flavor in my opinion. It was just sort of bland. I thought there were too many tomatoes for the amount of rice and the tomato flavor took over. We served it on the side of grilled steak tacos and it was actually pretty good inside the taco, but not on its own.
