Since rice is a favorite with my family, this recipe is an easy addition to any meal. It goes together quickly, and the flavors add a great taste to plain rice. CL Reader.
Vegetable cooking spray
1 cup uncooked instant rice
1 cup chopped onion
2/3 cup diced green bell pepper
1/2 teaspoon prepared mustard
1/4 teaspoon pepper
1 (14.5-ounce) can whole tomatoes, undrained and chopped
1 (5.5-ounce) can tomato juice
How to Make It
Coat a large nonstick skillet with cooking spray; place over medium-high heat until hot. Add rice, onion, and bell pepper; sauté 5 minutes. Add remaining ingredients; simmer, uncovered, 5 minutes or until liquid is absorbed.
I have yet to find a really good Spanish rice recipe. This one is just so-so. I used minute brown rice so the cooking time is much longer. I also omitted the vegetables (my kids won't eat them in rice like this) and with the canned tomatoes, added half a can of tomato sauce (in place of tomato juice) and some diced green chilis. way too tomato-y. I will try again, using only the canned tomatoes. I also added cumin, chili powder, garlic powder, black pepper and salt.
I didn't enjoy this recipe. It needed some more flavor in my opinion. It was just sort of bland. I thought there were too many tomatoes for the amount of rice and the tomato flavor took over.
We served it on the side of grilled steak tacos and it was actually pretty good inside the taco, but not on its own.
