This is a good recipe. I like that's it's easy enough to make for a weeknight (which is what I did). I found 40 mins was plenty of time for the potatoes to cook; I think you just have to cut them small, like the size it shows in the picture. I felt like this recipe was missing "something" though. It might be as simple as salt and/or pepper. But I would definitely make it again.
Cook times are completely wrong! Ended up taking an additional SIXTY minutes (80 total) to get potatoes soft enough! Had to eat separate from entire rest of meal. Was tasty, though late.
