How to Make It

Heat a medium saucepan over medium heat. Add quinoa; cook 4 minutes or until toasted, stirring frequently. Add water, butter, and salt to pan; bring to a boil. Cover and cook 13 minutes or until liquid is absorbed and quinoa is tender. Combine quinoa mixture, kale, lemon rind, and lemon juice in a medium bowl; toss to coat.
