Grated lemon rind and premium white chocolate elevate the favorite childhood treat of crispy rice cereal bars into Lemon-White Chocolate Chewy Crispy Bars. These treats will have adults asking for more.
2 tablespoons butter
10 ounce marshmallows
1 tablespoon grated lemon rind
6 cups rice cereal
4 ounces chopped premium white chocolate
How to Make It
Melt butter and marshmallows over medium-low heat. Stir lemon rind into melted marshmallows. Add cereal; toss well to combine. Press cereal mixture into a 13 x 9-inch pan coated with cooking spray. Heat white chocolate in microwave at HIGH 1 1/2 minutes or until melted, stirring every 20 seconds; drizzle over cereal mixture. Refrigerate for 15 minutes before slicing.
I made these to take to thanksgiving for a pre-dinner treat. Everybody LOVED them. My family doesn't do healthy either and I didn't tell them they were lightened up a bit. The lemon is so good and I usually don't like white chocolate, but it was great in this. Crowd pleaser!
