Melt butter in a large skillet over medium-high heat; add celery and green onions, and sauté until celery is tender. Stir in rice and remaining ingredients; cook over low heat 2 minutes or until thoroughly heated.
I had to use up some leftover rice when I came across this recipe. I used red onions instead of green and a little less celery than called for. I definitely liked it and will make it again. The recipe can be adjusted to add vegetables or other herbs and spices.
