  • Bring first 5 ingredients to a boil in a 3-quart saucepan over medium heat, whisking constantly. Boil, whisking constantly, 1 minute or until thickened. Remove from heat; whisk in butter and lemon rind. Gradually whisk in lemon juice until smooth; pour into a bowl. Cover and chill at least 4 hours.
