I'm not a huge fan of couscous normally, but really loved this dish, especially with the proscuitto wrapped shrimp. The only adjustment I made was to use blood orange EVOO rather than plain EVOO or butter when cooking the couscous. Will definitely be making this again!
This couscous is the perfect accompaniment to the prosciutto wrapped shrimp (see my review there.) I have made this couscous 7-8 times and I usually add more orange and/or lemon juice to taste. I think it makes it more flavorful and moist.
