I'm not a huge fan of couscous normally, but really loved this dish, especially with the proscuitto wrapped shrimp. The only adjustment I made was to use blood orange EVOO rather than plain EVOO or butter when cooking the couscous. Will definitely be making this again!
Easy and yummy, I made it with the Proscuitto shrimp and the flavors went very well together.
This couscous is the perfect accompaniment to the prosciutto wrapped shrimp (see my review there.) I have made this couscous 7-8 times and I usually add more orange and/or lemon juice to taste. I think it makes it more flavorful and moist.
Made this with the suggested Prosciutto Wrapped Shrimp. It is very light and I don't feel it is too bland or too lemony. Would make again without hesitation.
This couscous was flavorful, but a bit lemon-y for our tastes. Next time I will use a bit less lemon zest.
