How to Make It

Bring water to a boil in a medium saucepan. Stir in oats and dash of salt. Reduce heat; simmer 5 minutes, stirring occasionally. Remove from heat, and stir in sugar and lemon curd. Top oatmeal with blueberries, mascarpone cheese, and almonds.

Made this today, omitted the mascarpone, added 1 Tbsp chia seeds, and substituted 1 Tbsp agave nectar for the sugar, it was delicious, love this recipe and will definitely be making it often!

Made as directed - fabulous breakfast. I've never had lemon curd before and the combination with the blueberries and the mascarpone was outstanding. I will definitely make this often.

This was delicious.  It is a dish I would not be afraid to serve to company or with a brunch.  The lemon curd and mascarpone really make for a tasty treat.  I would not be afraid to trade the blueberries for a different fruit.

This recipe is soooo delicious!  The blueberry, lemon, and marscapone all taste incredible together!  Quick ennough for a weekday and fancy enough for company!
