How to Make It

Step 1

Cook pasta according to package directions (omit salt and fat).

Step 2

Add asparagus to pasta during last 3 minutes of cooking time; drain.

Step 3

Stir in remaining ingredients, and serve immediately.

It's really fast to make, and one-pot, which saves on clean-up. The lemon, asparagus, and green onions make it fresh and light, and you can adjust the amounts easily to your taste. My husband and 4 year old son loved it, and my vegetarian in-laws were very happy with it as well.
