Quite possibly the most disappointing recipe I have made from this site.
After minimal tasting the whole thing went into compost.
Made this last night and am eating it for lunch right this minute. Scrumptious does not even describe it enough! We did add an equal amount of cumin. I used flour torts instead of corn, but will definitely use corn torts next time, maybe already toasted. Excellent and will become a menu staple!!
I raised 6 boys on this recipe. It was a Wednesday night favorite and a guarantee that they would make it home, get their homework done (or take a break) and convene around the dinner table for some good food and conversation about their day. LOVE this recipe!

Wow, this was easy and turned out better than expected. I heard about this dish on an NPR program one day and wanted to give it a try. I did tweak it some. I used left overs from a rotissiere chicken, and instead of the bell pepper, I added canned corn and black beans and used 2 cans of cream of chicken soup instead of the c.o. mushroom. Also didn't do the canned tomatoes with chiles. I did use a can of diced tomatoes and added just a bit of awesome roasted Pueblo green chile that is local to this area. I think that's what made this dish so special. My picky kids really liked it and are already asking when I'm going to make it again!
This is THE King Ranch recipe! All the short cut methods cannot compare.
We like spicy, will add jalapeños and make sure you use the corn tortillas. You can not omit th corn tortillas. I skimped but won't next time.
This was okay. I can see how some people would like it. I make a white chicken enchilada that is very similar to this (and tastes a bit better). So I do not think I would make this recipe again; I will stick with my enchilada recipe. As a suggestion, I would put chopped tomatoes and green onions or cilantro on the top of this dish as a garnish after it comes out of the oven.
I make this at least twice a year. I make a whole recipe and freeze half. I also add black beans and cilantro. Can't beat this "comfort food."
Anyone who rates this dish under 4 stars clearly doesn't know how to cook, because unless you completely burn it or something, you can't go wrong. I made this for my husband and he about peed his pants with delight over this casserole. He's allergic to mushrooms so we just used two cans of cream of chicken, and actually we didn't use two whole cans, maybe just 1 1/4 cans. We made sure to drain the can of tomatoes and chiles as the extra water might have made it a bit watery. We loved how the oven slightly crisped the tortillas that weren't completely covered - yum! No complaints about this dish, very good!

My whole family loves this recipe...I am not shy about adding something different every time, just to change it up a bit and to add more veggies for the kids. I have added a can of black beans, drained and rinsed before adding to the mixture. I have also added frozen corn or a can of corn, drained and rinsed before adding to the mixture. If you like cilantro and green onions, both are a great topping for added flavor. I have also used a can of mild rotel in place of the tomato and green chiles. The casserole with a side salad is a complete meal that is easy, quick and filling. Next, I would like to try making it with fajita beef instead of chicken, mmmm, sounds good already!
I have had this recipe in my collection for years, but had never made it. It sounds great. Then, one night last week, everything came together and I had all the right ingredients, so I finally made it! What a mistake! TERRIBLE! No one liked it, the whole pan went in the trash and we ordered pizza. My hubby's comment was that maybe it'd be better as a dip seemed appropriate. Such a let down.
Good Recipe but with some tweaking.I made this for the Seaside Halloween party. I used flour tortillas and cut them into strips and they need to be 1" pieces. I'm not sure flour is the way to go as corn may go better with the ingredients. I added 1 small can of green chiles and it could have used more. I omitted the pepper; used reduced fat cheddar; bought a rotiserie chicken and used all the meat; added a chopped red pepper; bought reduced sodium soups. More cheese would have been nice and probably more chili powder - 1 tablespoon? There are many King Ranch chicken Casserole recipes.
Love this recipe. Easy, quick, great to fix ahead of time. Add a salad and you have a meal. I add an extra can of green chilis to mine.

Fantastic and easy. I did not have cream of chicken soup. Used cream of mushroom and 8 oz. sour cream. Wow!!
UGH! Really, I should have figured this out that the recipe would taste like canned soup - and it did. Guess we have enjoyed so many of the "fresh" recipes from this site that we have lost our taste for canned soup based food. Was quick and was easy, and I tossed the recipe - never again.
made this for my family for dinner tonight and it was a huge hit!! I will be making this again but I might try the light version next time.
Was wanting chicken and something a little spicy...thought about this dish but didn't know how to make it. This is soooo easy and delicious. The only thing I didn't have was a bell pepper, really didn't miss it. Is a definate keeper!!
I found this recipe this last week in People Magazine and thought it would be great for Valentine's Day with my family. The magazine says to cook it for 55 min. and this recipe is 30 min., I would go with the 30 minutes because we thought it was a little overcooked. But it was very good. Next time, we are going to add a can of corn.
I made last night for dinner and it was simple to make with ingredients you probably already have on had. Simple and delishious - sure to be a family fav.

This is the only King Ranch Casserole I have ever enjoyed. I followed the directions and it was lovely. Excellent for freezing for later.
