I've made lots of recipes like this one and have had difficulty finding one that doesn't leave half the egg mixture in the muffin pan, despite great efforts to grease the pan or use muffin cups. The step of pressing the hash browns into the cups and cooking them separately is not necessary. I'd recommend mixing it all together and cooking it at once. As for getting it out of the pan, I think muffin cups help, but often the food is just left in the bottom of the cups. I give it three stars because even with the trouble and mess, the recipe tasted good.
