1 (4.5-ounce) can diced green chilies, drained well
1/4 cup chopped black olives, drained
1 small tomato, seeded and finely chopped
4 ounces finely shredded cheddar cheese
4 green onion tops, sliced thinly (reserve 1 tablespoon for garnish)
1/2 teaspoon hot sauce (optional)
How to Make It
Combine uncooked sausage, egg, taco seasoning and breadcrumbs; mix well. Form into 1 1/4-inch balls; transfer to ungreased miniature muffin tins. Use thumb or fingers to make a well in the middle of each ball, forming a cup with 1/4-inch thick sides. Set aside. Preheat oven to 350° F. Combine remaining ingredients; stir well. Fill each sausage cup with cheese mixture. Bake 20 minutes; cool 5 minutes before removing from tins. Drain well on paper towels. Serve warm, garnished with remaining green onion.
