Season fresh shrimp with a homemade jerk seasoning mix and grill over medium-high heat for three minutes on each side. Serve with a sweet fruit salsa made from chopped pineapple, chopped cucumber, sliced red onion, chopped cilantro, and cider vinegar.
1 tablespoon sugar
1 tablespoon paprika
1/2 teaspoon salt
1/2 teaspoon garlic powder
1/2 teaspoon ground red pepper
1/4 teaspoon ground thyme
1/8 teaspoon ground allspice
2 tablespoons olive oil
1 1/2 pounds peeled and deveined large shrimp
How to Make It
Prepare grill to medium-high heat.
Combine first 7 ingredients. Combine oil and shrimp in a large bowl; toss well to coat. Sprinkle spice mixture over shrimp; toss to coat. Thread shrimp evenly onto 8 (8-inch) skewers. Place skewers on a grill rack coated with cooking spray; grill 6 minutes or until done, turning once.
Fruit salsa: Combine 2 cups chopped fresh pineapple, 1/2 cup chopped cucumber, 1/2 cup vertically sliced red onion, 2 tablespoons chopped fresh cilantro, and 2 teaspoons cider vinegar.
I've made this a few times and now I don't bother with the skewers. I use a grill basket and then we serve the salsa over lettuce greens and topped with the shrimp. Avocado is a nice add too. Quick and easy.
This is a great recipe.......I used a gourmet quality jerk spice (lists all the same ingredients as this recipe....and it worked so well. This is a fabulous recipe. Awesome for summer. The salsa is amazing!!!!
I absolutely loved the spice rub in this recipe! It was flavorful without being overpowering and the sugar made it very tasty. I didn't make the salsa and I served it with a cuban black bean and rice dish. Great summertime meal!
Absolutely delish! I used the George Foreman instead of the grill which I'm sure will taste superb! I used extra servings of the garlic powder and red pepper which resulted in a wonderful flavor! Served over a bed of vegetable melody rice and without the pineapple in the salsa, it was to die for! Definitely will be making it again in the near future.
Full disclosure: I used this seasoning blend on chicken tenders that I baked...I didn't have shrimp when I got this email alert, so I used what I had. But...WOW. They were terrific and I can't wait to use the proper shrimp recipe!!
This recipe is phenomenal! Love the spices on the shrimp, if you don't like strong seasoning just cut back on the amount. We made enough to have left overs and ended up eating them all. The fruit salsa is delicious, the only change I made was to add a little jalapeno for some extra heat. This is definitely a keeper.
