1 (17-ounce) package of frozen puff pastry, thawed
2 mangos, chopped
1 small can mandarin oranges, drained
2 green onions, chopped
1 tablespoon chopped red onion
1/4 cup black olives, chopped
2 tablespoons chopped parsley
How to Make It
Prepare the Pinwheels: Preheat oven to 350° F. Mix first five ingredients in a bowl. Roll out one pasty sheet to 8- x 12-inch rectangle. Spread with half of the sausage mixture. Roll up, starting from the short end. Slice in one inch pieces. Repeat with one more pastry sheet. Place slices on cookie trays and bake 10 minutes on each side.
Prepare the Mango Salsa: Mix the mangos, oranges, green onions, red onion, olives and parsley together, chill and serve cold.
