Bone-in pork chops are delicious when prepared in the Italian style. Serve these chops with rice and your favorite green vegetable.
4 (6-ounce) bone-in center cut pork chops (about 1/2 inch thick)
2 garlic cloves, halved
1 teaspoon dried Italian seasoning
1/4 teaspoon salt
1/2 cup grape tomatoes, halved
1/2 cup chopped bottled roasted red bell peppers
1/4 cup chopped fresh parsley
2 tablespoons capers, drained
2 tablespoons cider vinegar
1/8 teaspoon crushed red pepper
How to Make It
Rub both sides of pork chops with garlic halves; sprinkle with Italian seasoning and salt. Coat pork chops with cooking spray. Place a large nonstick skillet over medium heat until hot. Add pork chops, and cook 6 minutes on each side or until done. Transfer pork to a serving platter; keep warm.
Add tomatoes and remaining 5 ingredients to pan; cook 1 minute or until thoroughly heated. Spoon over pork.
