Serves 4

Sliced zucchini brings a fresh element to Italian sausage pasta. Served with some garlic bread and a glass of wine, it quickly becomes a satisfying meal.

How to Make It

Step 1

Cook pasta according to package directions. Drain, return to pot, and set aside.

Step 2

Meanwhile, in a large nonstick frying pan, heat oil over high heat. Add sausage and cook, stirring often, until cooked through, about 5 minutes. Transfer sausage to a plate and set aside.

Step 3

In the same pan, cook garlic, onion, and zucchini until starting to brown, about 4 minutes. Stir in tomatoes, pepper, and reserved sausage and cook until heated through, about 3 minutes.

Step 4

Combine sausage mixture with reserved pasta and transfer to a large serving bowl. Sprinkle with half the parmesan and serve with remaining cheese on the side.

Mine looked a little differently, and I used feta cheese instead. Loved it!

Really liked this recipe! Very easy/quick to prepare and a great way to use up all those late summer zucchini and tomatoes. I like that it doesn't use a heavy sauce, which allows the flavor of the sausage and tomatoes to rise to the top.

This wasn't bad at all. I think a saucier dish is called for...maybe use a can of diced Italian-flavored tomatoes in place of the fresh? Saves prep time at the least. It was tasty enough, not too spicy for my kids, and hubby liked it. Probably could use a little tweaking with some canned diced tomatoes added with their juices, and some Italian seasoning added in at some point. Otherwise a good, QUICK and CHEAP dinner! Who couldn't use that??

Made this for a camping trip with great reviews. Easy to have it prepped ahead of time. I use game sausage - this was antelope Italian sausage. Served with an already cut up fruit salad - viola! backcountry service with dining room flavors!
