You use it for just about everything else, why not use the Instant Pot to make candy? These chewy, chocolatey DIY “Tootsie Rolls” make such a fun treat to share, especially during the holidays. Plus, this Instant Pot candy recipe provides for a fairly simple kitchen project kids can help with. While your chocolate mixture cools, you can have little helpers cut squares of wax paper, and then let them roll/wrap the individual candies. If you want to test the candy mixture for doneness along the way, take a small amount with a spoon and drop it onto a glass plate. Once it is cool enough to touch, take the mixture and put it between your thumb and index finger; if the mixture is tacky but firm, then it is ready to pour.

  • Combine milk chocolate chips, honey, and heavy cream in a (6-quart) Instant Pot. Stir to coat all ingredients. Put the lid on, and turn setting to Slow Cook on High 1 hour.

  • Remove lid, and stir well. Add white chocolate chips and vanilla. Stir to combine. Turn Instant Pot off; allow the device to cool down for 3-5 minutes

  • Turn Instant Pot to Sauté setting on Low. Cook, stirring constantly, until mixture reaches a smooth consistency, 20 to 30 minutes.

  • Pour mixture into an 8- x 8-inch or 8- x 6-inch baking dish lined with parchment paper. Allow to cool 1 hour.

  • Once mixture is cool but still warm, remove from dish using parchment paper as handles. Cut into 1- x 1/2-inch pieces. Roll pieces into logs, and wrap individually with squares of wax paper.
