  • Fill a small saucepan with water and bring to a boil. Once the water is boiling, reduce to a rapid simmer and carefully drop in the eggs. Cover and cook for 7 minutes.

  • While the eggs are cooking, set your oven to broil. Pile on a handful of cheese on your toast, place on a baking sheet and broil for a few minutes. When the cheese is melted and starts to brown, remove the toast from the oven.  

  • When your timer buzzes, run the eggs under cold water then peel them. Smash over the toast and sprinkle with salt and pepper.
