Place the first 3 ingredients in a food processor; pulse 2 to 3 times or until minced. Add soy sauce, coriander, honey, and chili paste, and process until smooth. Place marinade in large bowl; add chicken, and toss to coat. Chill 10 minutes.
Remove chicken from marinade; discard marinade. Place chicken on a foil-lined baking sheet; broil 6 minutes on each side or until done.
I thought this was good, but I think the smokey flavor was a little to strong (I think it was from the coriander). I used chicken breast and baked them for about 35 minutes. The chicken came out juicy and well coated with the marinade. I will probably make again, but I think I would reduce the amount of coriander to allow some of the other flavors to come through.
This chicken is DA BOMB! We all absolutely loved it. The sweetness of the honey and the zing of ginger really give it a fantastic flavor. The only thing I did differently was grill it over a charcoal BBQ and I would HIGHLY RECOMMEND doing that. YUM!
Absolutely delicious!!! Very flavorful and easy to prepare. Would absolutely make this again!!!!
I served this with Cooking Light's "Peanut Rice" recipe -- a real winner (jasmine rice, turmeric, peanuts and green peas).
