I don't give out five-star ratings a lot, but this recipe is getting one
because it is unusual, tasty, very low in calories for a good-size
portion, and a unique combination of ingredients and flavors. I've made
it two times; once with regular cucumbers and once with Persian and
both turned out well. It's crunchy when made, and retains the texture
even after a few days. I'm always thrilled to find a side dish/salad
with no mayonnaise or oil, especially one that tastes this good and is
this satisfying. Serranos can be pretty hot, so some people may want to
use less than a whole one - not me! For my husband and I, the
combination of taste, texture, portion size, and calorie count really
makes this a winner.
If you're looking for an authentic recipe, I don't usually put any spices, just black salt, although maybe other parts of India add spices, not sure. I've definitely never seen this salad with apples! It should be sour, salty and cruncy, no sweetness.
