How to Make It

Step 1

Combine cornmeal, flour, baking powder, salt, sugar, pepper, garlic powder, and onion in a large mixing bowl. Add milk, 1/2 cup oil, and eggs; stirring until well blended.

Step 2

Carefully drop batter by tablespoonfuls into deep, hot oil (350°), cooking only a few at a time. Fry 3 minutes or until golden brown. Drain well on paper towels. Serve immediately.

These are really good. I looked for a recipe that didn't require self rising cornmeal/flour. There is an error in the recipe: Ingredient list includes 1/4 cup veg. oil, but the directions indicate 1/2 c. oil - I went with 1/2 cup and it worked. I added minced jalapenos and sauteed chopped onions. Next time, I'm including 1 cup thawed frozen corn into the mix. They were so yummy ! Easy and quick to make. I didn't get 4 dozen, but mine were a little bigger - maybe 2.5 dozen came through.
