Have wanted to try this cake for about a year now and finally did it. AMAZING is all that comes to mind when describing it. I made a few minor changes: I mashed 4 bananas instead of chop, added 1/4 cup coconut flakes, cut back the sugar to 1 3/4 cup and added 3/4 cup chopped pecans. I thought the cake would have been oily but the 1 1/2cup was just right. Baked it in two 9" pans for 30 minutes at 350F.
This was a great cake! I only made one modification out of necessity, I used three 8 inch cake pans instead of two 9 inch (because my 9 inch pans weren't deep enough). I cut the baking time by about 5-7 minutes for the adjustment. This also saved me from having to slice the cakes...I just stacked one on top of the other and it turned out beautiful!
