A little too sweet. I really like this but I had to cut out some of the honey mayonnaise dressing as it was way to much for me. I used the sweetened craisins with reduced sugar, it was way too sweet! Lol, I think I'll go with unsweetened cranberries or rasins next time. Great recipe!
I love this recipe. We've made it about three times now. I have made a few tweaks though. For one, I only add 1/2 cup of mayo, and substitute another half cup with sour cream. I have added a couple more spoonfuls of the sour cream if needed. I also just use any nuts that I have on hand, which is always almond. For the cranberries I use cherry juice infused, but I'm sure it will be great with any flavor. I use a rotisserie chicken and this last time I used cucumber. The cucumber was great but I do prefer the celery. Great for sandwiches and also with pita chips. Yummy!

This is basically my chicken salad except I add both chopped golden Delicious apple and green grapes and leave out the honey and cranberries........it's an easy to tweak chicken salad to make your own and everyone loves the flavor combos! What I especially love is Southern Living's use of tart shells in the presentation........who'd have thought of that? I will use some mini pate brisee shells I make the next time........like a cold chicken pot pie that would be very impressive to serve to guests or as others have said for showers and such. Caprese or fruit salad on the side would be spectacular. Thanks for the ideas!
So good. I made this for a baby shower for 48 ladies. I bought pre-made phyllo mini cups and placed the chicken salad in the cups. It was a great presentation along with a fresh fruit salad. Everyone wanted the recipe. I will make this again.
Love this easy chicken salad! First made it about a month ago for a friend's baby shower. I usually don't trust new recipes for large groups, however everyone reviewing this dish went bonkers for it... so I said, "let's do it!" For the shower, we made the dish with grapes instead of cranberries since our mommy-to-be loves grapes. We also left out the nuts; a rule in my house (sorry nut lovers). Everyone raved about it!! I felt the grapes made the dish a little too runny, however the taste was amazing. I just finished making this chicken salad with cranberries and apples for the week ahead - lunch that I will look forward to. I snuck a couple of bites and it was Yumtastic!!! I did cut down on the mayo, using 1c instead of 1 1/2c, and I used 1/4c honey instead of 1/3c. Didn't want to get too crazy about cutting calories; changes did not adversely affect taste at all. Also, added a kick by adding a dash of our homemade cayenne pepper to the mix. Can't wait to grub on it!
This was very good and so easy. I used quorn faux chicken cutlets to make a vegetarian version and I loved it. Will make it again soon!
This is a great recipe. I used 6 cups shredded chicken (a little too much mayo for me otherwise). I also put chopped red grapes instead of the cranberries, although it is good either way. Keebler multi-grain crackers are very good with it! Going to make it for an upcoming bridal shower with homemade crescent rolls.

I have made this recipe about 6 times in the past year and everytime I make it , it just gets better and better! Everyone insist that I give them the recipe! LOL It is delicious and so easy!!. I serve it in a lettuce cup and the presentation is beautiful with a little slice of fresh fruit on the side.

We love this recipe. It's easy and you can adjust the amount of ingredients by what you like. We serve it on croissants and it's a great sandwich for bridal or baby showers, everyone loves it.
