This is a version of heringsalat (herring salad), which is traditionally prepared with herring, apples, and raw onions. You can substitute smoked trout for herring. Serve with a well-chilled lager and Brown Beer Rye Bread. Garnish with dill sprigs.
2 cups finely diced Granny Smith apple (about 1 medium)
1/2 cup chopped Rio or other sweet onion
1/4 cup chopped green onions
1 teaspoon chopped fresh dill
1/2 teaspoon sugar
Dash of freshly ground black pepper
2 hard-cooked large eggs, finely chopped
1 (12-ounce) jar kippered herring in wine sauce, drained and cut into 1/4-inch pieces
1 cup thinly sliced English cucumber
How to Make It
Combine first 8 ingredients in a bowl. Cover and chill 4 hours. Serve salad over cucumber slices.
Made this for the full Oktoberfest menu and it was great. Was a bit worried about the apple but all the flavors blended well. Only thing was it needed a little something to bind it together so used a yogurt base with some flavorings and it worked great. Would make again, everyone loved it. It all went and the cucumber base makes it.
