I've made this recipe many times but with some adaptation since I make it in a rice cooker which makes it very easy to make ahead of time. For one rice maker cup of rice, I use 1T of butter and 1/2 the amount of dried vs. fresh herbs. I use dried just because I always have them on hand. I don't use the added salt as I typically use salted butter and the parmesan adds enough saltiness. I cook the rice and let it sit in the rice maker when done. I melt the butter in the microwave in a glass measuring cup and add the garlic and herbs and mix together. I pour this on the rice in the rice maker,stir, and let sit however long until I'm ready to serve. Right before serving i mix in the green onions (or chives) and the parmesan. Great side dish that goes with so many things and easy to make ahead with a rice cooker.
This is our "go to" regular rice recipe that we have been making for years. It is fabulous. We double the recipe for 4 people except that we use 1 and 3/4 cups of water when doubling instead of 2 cups. We use Land O Lakes stick light butter instead of margarine. We believe using basmati rice is important to the flavor. We consider the green onion tops to be optional (although they are great to use if you have them handy).
