Easy to make and full of flavor, Herb-Roasted Potatoes prove to be a solid side dish to complement your favorite entree.

How to Make It

Preheat oven to 425°. Combine olive oil, thyme, salt, pepper, and potatoes in a medium bowl; toss to coat. Place potatoes on a jelly-roll pan coated with cooking spray. Bake at 425° for 28 minutes, stirring once. Sprinkle with parsley.

I also served this with Peppercorn-Crusted Beef Tenderloin with Gremolata for Christmas Eve dinner.  Nice side but nothing special.

Super-easy.  Made with halved baby yukon golds & served with CL's peppercorn-crusted beef (40min dinner from Dec '12 issue).
