4 (6-ounce) striped bass fillets
1 tablespoon extra-virgin olive oil
1 teaspoon chopped fresh thyme
1 teaspoon chopped fresh oregano
1/4 teaspoon salt
1/4 teaspoon freshly ground black pepper
How to Make It
Preheat oven to 425°. Coat a baking sheet with cooking spray. Place fish on pan. Grate lemon rind to measure 1 teaspoon; juice lemon to measure 1 tablespoon. Combine rind, juice, oil, thyme, oregano, salt, and black pepper; drizzle mixture over fish. Bake at 425° for 13 minutes or until desired degree of doneness.
Fantastic! This recipe would be good with mahi mahi, trout, cod... It is so tasty and easy to prepare. Garnished with lemon slices. Served with Green Bean Salad with Mustard Crema (Aug 2010), which was also delicious.
This is the best fish recipe hands down. I used trout instead of Bass. Make sure you use fresh ingredients. I used much more lemon than the recipe called for, and squeezed it on before cooking and after. I'm saving this recipe and I'm sure I will make it over and over again.
