Makes 8 to 10 servings

This Heavenly Chicken Lasagna recipe is the ultimate creamy and satisfying comfort food. It's the perfect meal on a chilly night.

How to Make It

Step 1

Melt butter in a skillet over medium-high heat. Add onion, and sauté 5 minutes or until tender. Stir in soup and next 5 ingredients. Reserve 1 cup sauce.

Step 2

Drain spinach well, pressing between layers of paper towels.

Step 3

Stir together spinach, cottage cheese, and next 3 ingredients.

Step 4

Place 3 lasagna noodles in a lightly greased 13- x 9-inch baking dish. Layer with half each of sauce, spinach mixture, and chicken. Sprinkle with 1 cup Cheddar cheese. Repeat procedure. Top with remaining 3 noodles and reserved 1 cup sauce. Cover and chill up to 1 day ahead.

Step 5

Bake at 350° for 45 minutes. Sprinkle with remaining 1 cup Cheddar cheese, and bake 5 more minutes or until cheese is melted. Let stand 10 minutes before serving.

Step 6

NOTE: For testing purposes only, we used Cantadina Light Alfredo Sauce, found in the dairy section of the supermarket.

Delicious splurge

This was a great dish. I used no boil lasagne and cream of mushroom soup. I also used a mixture of longhorn cheddar and provolone because it was on hand. I thought the cheddar would give it an odd tint but it didn't. Using the no boil lasagne I had to cover it with foil at first. I baked it for about 35 minutes and then uncovered for another 10.

Very nice recipe, easy and make ahead. However,the instructions are confusing. If there are to be two layers of lasagna noodles, 3 noodles each layer, why does the ingredient list say 9 noodles? I therefore assumed that 3 noodle layers were intended. I also used shredded provolone instead of cheddar cheese. It was excellent, especially since the recipe contains white wine which didn't sound good with use of cheddar.

Hate to ruin a perfect review so I give it 5 stars but...I don't think it set up right, was quite runny for me and the noodles slid off. I did make my own alfredo b/c I forgot to get the jarred and I forgot to pull out some sauce until after the first layer so both of these may have contributed to it. AND, haha, I forgot to put in the wine. Used whole wheat noodles. All in all it had excellent flavor but I do believe I'll tinker with the recipe some. It is a keeper though.

I skipped the cottage cheese, and added mozzerella in between the layers, and a little co-jack. I just dotted the riccotta cheese instead of a thick layer. I think green chilis would have been great in this for some green color instead of the spinach which I forgot to add and did not miss. This is a real gem of a recipe! Will go in the family favorites book!
