How to Make It

Step 1

Preheat broiler to high.

Step 2

Heat a nonstick skillet over medium-high heat. Coat the pan with cooking spray. Add ham to pan; sauté 2 minutes or until lightly browned. Remove from pan. Recoat pan with cooking spray. Crack eggs into pan. Cover and cook for 4 minutes or until desired degree of doneness. Remove from heat.

Step 3

Place 4 muffin halves, cut sides up, on a baking sheet. Top each half with 1 cheese slice. Broil for 2 minutes or until cheese melts. Divide ham among cheese-topped muffin halves; top each with 1 egg and 1 muffin half.

Good, basic breakfast

Easy and fast to make.  These are a treat for us on the weekend.  Sometimes I like to change up the cheese and use cheddar or mozzarella.  Adding a slice of tomato or a sprig of basil or oregano can also be nice.

I do mine a little differently but same concept...I omit the ham and use 2 slices of cheese (low-fat mozzarella and cheddar). I also sometimes put a slice of tomato on it. So delicious, and as another reviewer said, you feel like you are eating something "bad" (especially with the extra cheesy gooeyness!) but it's so healthy.

This has GOT to be one of my & my hubby's all time favorite recipes! It's SO good, filling and you feel like you're having something "bad"! We use either the Thomas' or FiberOne 100 english muffins. So awesome! :)

My husband and I love this! I put the muffins under the broiler to toast them and then put the cheese on to melt the cheese. We used Swiss deli cheese and whole wheat Thomas English muffins and loved every bite! It was very filling and we couldn't wait to have it the next day
