Makes about 3 cups

Made with sweet-hot pickled okra and hard-cooked eggs, Ham Salad Tea Sandwiches are a crowd-pleasing favorite sandwich filling. Plan on 1⁄4 cup filling for each whole sandwich. Freeze bread slices until firm. (This makes it easier to trim and cut the sandwiches.)

How to Make It

Step 1

Process ham, in batches, in a food processor until coarsely ground, stopping to scrape down sides as needed. Place ground ham in a bowl, and stir in eggs, mayonnaise, and pickled okra. Add salt and pepper to taste.

Step 2

Spread on: rye bread slices.

This recipe is delicious!  To ensure the bread doesn't become soggy when making these ahead of time, use room temperature margarine or butter and spread an ultra-thin coating on both sides of bread before covering with Ham filling!  Place filled and cut sandwiches on platter, cover with plastic wrap and store in refrigerator up to one day before serving.
