Time: 2 minutes. You can leave the liquor out if you like, of course.
1/2 can (12 oz.) frozen pineapple juice concentrate
About 3 cups seltzer or club soda
About 2 cups ice cubes
Your choice of tequila, vodka, rum, bourbon, cognac, or even gin (optional)
How to Make It
Put frozen pineapple juice in a large pitcher. Add 2 to 3 tbsp. seltzer; whisk to blend. Gently stir in 3 cups seltzer and plop in some ice. Serve with bottles of whatever was imbibed the night before, so each person can add to taste—or not at all.
Note: Nutritional analysis is per drink without alcohol.
