How to Make It

Step 1

Combine mayonnaise and pesto.

Step 2

Spread 1 tablespoon mayonnaise mixture into each pita half. Stuff each pita half with 1 lettuce leaf, 1 serving Simple Grilled Vegetables, and 2 tablespoons cheese. Serve immediately.

Delicious. We grilled the veggies using an indoor grill pan. Also, we sliced the mushrooms and bell peppers after they were cooked, and substituted feta for the goat cheese.

This is a favorite in our house. This sandwich needs nothing else it's perfect the way it is. Yummy.

Perfect as written. Used indoor grill pan. Didn't measure ingredients, just followed basic plan. Easy and quick. Absolutely delicious!
