This all-purpose, easy summer side goes great with just about any main dish. You can keep the cooking indoors by using a grill pan; because of the smaller surface area, you'll need to cook the squash in two batches.

How to Make It

Step 1

Preheat grill to medium-high heat.

Step 2

Combine first 6 ingredients in a large bowl.

Step 3

Coat squash slices lightly with cooking spray. Place squash on grill rack coated with cooking spray; grill 1 1/2 minutes on each side or until tender. Add squash to parsley mixture; toss gently to coat. Serve immediately.
