  • Make a fire in a charcoal grill (about 375°F to 400°F) or preheat a gas grill to medium. Season both sides of the chops evenly with salt and pepper. Let rest at room temperature for 20 minutes.

  • In a small bowl or measuring cup, mix together the soy sauce, vinegar, lime juice, brown sugar, and sriracha, if using. Place the chops directly over the coals and cook, covered, for 3 minutes. Turn and brush with the soy mixture, cover, and cook an additional 3 minutes. Continue to turn the chops and brush with the soy mixture every 3 minutes until cooked through, about 18 to 21 minutes total, or until chops reach an internal temperature of 150°F (closest to the bone). Remove from heat, brush once more, and let rest 10 minutes before serving.
