Barbecue sauce is hardly an expected place to find rhubarb, and that's part of what we love about this addictive, tangy-sweet sauce tinged with smoky chipotle heat. Extra sauce can be refrigerated for up to one month. Also try it on pork and burgers.

How to Make It

Step 1

Preheat grill to high heat.

Step 2

Combine oil and chicken; toss to coat. Sprinkle chicken with pepper and salt. Place chicken on grill rack coated with cooking spray, and grill 6 minutes or until well-marked. Place 1 cup Rhubarb-BQ Sauce in a large bowl. Add chicken to bowl, tossing to coat chicken. Return chicken to grill; cook, turning and brushing with sauce from the bowl until glossy and caramelized, about 12 minutes.

What a wonderful way to use rhubarb!

I've been looking for a way to cook rhubarb that isn't sweet and this fits the bill perfectly! I made the BBQ sauce with maple syrup instead of sugar as it isn't processed and adds a depth of flavor. I also got fancy and made kabobs that turned out delish! Highly recommend this recipe and am adding it to my recipe box!

Omitted the oil and just grilled the chicken with the sauce on.  15 minutes on each side.  Came out perfectly.  Will definitely make again during rhubarb season.

We enjoyed this although the rhubarb flavor is quite subtle. Yummy served with greens and blue cheese grits!

Our family loved this recipe, with approvals from our 7 & 10 year olds. I made the BQ sauce ahead of time, which made dinner a snap to prepare after our busy schedule. We made corn on the cob & microwaved a bag of sugar snap peas to round out a nice and easy spring meal.
