Brush grilled apricots with a mixture of olive oil, honey, and fresh thyme and serve as a simple side dish, over a bed of greens, or even as a topping for grilled pizza.

How to Make It

Step 1

Preheat grill to medium-high heat.

Step 2

Combine olive oil and honey; brush over cut sides of apricots. Arrange apricots, cut sides down, on a grill rack coated with cooking spray. Remove from grill; sprinkle with salt and black pepper. Garnish with thyme.

Very simple but very good. Directions don't include how long to grill, so we just guestimated and it worked out fine. Served as side to jerk pork tenderloin.
