The tangy-sweet taste of this quick, colorful salsa pairs perfectly with grilled chicken, pork, or crisp-fried catfish.

How to Make It

Stir together tomatoes, peach, green onions, olive oil, cilantro, vinegar, honey, salt, and ground red pepper. Cover and chill 1 hour before serving.

Good as it is, but better with more flavor. We like cilantro, so I used about 1/4 C, chopped. I also added a few shakes of cumin (maybe an 1/8 tsp) and some red pepper flakes, and used some Mrs. Dash in addition to (less of) the regular pepper. Now, it really pops!
